THE FIRST WORD

bark
The salt and sugar in the rub cure the exterior of the meat and help form the tasty, charred crust called "bark."
The process by which the bark is formed is sometimes called "sweating," where the food surface warms and sugars and amino acids react together. The technical name for this process is the Maillard reaction.
